Bright and colorful rainbow chard is not actually a variety of chard but rather, several varieties of chard bunched together. This means we get the best of many worlds in terms of color and flavor. It can be easy to identify by its colorful stalks of purple, orange, yellow, pink, and/or white. So fun!
Since rainbow chard is a varied bunch, you may get an earthy taste, a sweet taste, and perhaps a nutty flavor altogether. The leaves are large and tender, making a great addition to salads. The stalks are crunchy like celery and are excellent to saute with some olive oil and garlic or lemon. You can even take it one step further and give this chard and potato quiche a try!
Similar to many other leafy greens, rainbow chard is high in valuable vitamins and minerals. Specifically, it contains vitamins A, C, and K, and minerals like iron, magnesium, and calcium. Additionally, this veggie is a great source of phytonutrients and fiber too.
