Frozen Desserts with Hidden Veggies
What if I told you that you could indulge in the foods you love, while also getting a full serving of vegetables? Healthy treats like these plant-based desserts almost sound too good to be true; a whoopie pie with the nutrition of a full cup of spinach? A cupcake with the antioxidant power of fresh beets? What’s the catch?
There isn’t one; it’s just homemade baked goods packed with an organic punch. Every vegetable-based dessert starts with organic, non-GMO vegetables. The veggies are pureed and then folded into each recipe for a hidden nutritional boost.
Jen Ehlers is the culinary wizard behind these amazing healthy treats. Located just down the road in Media, Jen has one goal above all; make the food delectable, and the veggies undetectable.
Her story has a familiar beginning; two kids who just wouldn’t eat their vegetables. Nevertheless, Jen persisted. She started sneaking veggies into food wherever she could. Her kids were none the wiser, the recipes kept on coming, and eventually Veggielicious was born. Now, she shares her handmade vegetable-based desserts with Martindale’s shoppers.
What’s on the Menu?
Jen’s Carrot Cupcakes are nut-free and made with 2 cups of whole organic carrots. The carrots are finely pureed and added into the mixture, resulting in a moist, delicate carrot cake. Whipped cream cheese frosting is the perfect complement to these “24 carrot” cupcakes.
It’s an Amish Country favorite, now stuffed with nutrients. Veggielicious Whoopie Pies will make you say “whoopie!” when you look at the ingredients list – organic veggies are first in line! Choose from two different varieties, spinach or pumpkin. Vanilla marshmallow fluff sandwiched between two pillowy cookies; it’s a celebration with every bite.
Pink Velvet Cupcakes give you the luxurious chocolate experience of your dreams, plus a whole serving of beets. The signature red color doesn’t come from a dye, but rather from betalain, the antioxidant-rich pigment that gives beets their signature color. Beets are also high in iron, potassium, vitamin D, and fiber – that’s a whole lot of nutrition for something so delicious.
Chocolate Chunk muffins feature organic zucchini as the very first ingredient, but you’d never know it. Cinnamon, vanilla, and lemon combine with hearty chunks of semisweet chocolate for a mouth-watering flavor. Each pack of 4 muffins contains two whole cups of zucchini, and each muffin weighs in at just 73 calories. Enjoy a guilt-free healthy treat, and get your daily dose of veggies at the same time.
