Her kids were none the wiser, the recipes kept on coming, and eventually Veggielicious was born. Now, she shares her handmade vegetable-based desserts with Martindale’s shoppers.

What’s on the Menu?

Jen’s Carrot Cupcakes are nut-free and made with 2 cups of whole organic carrots. The carrots are finely pureed and added into the mixture, resulting in a moist, delicate carrot cake. Whipped cream cheese frosting is the perfect complement to these “24 carrot” cupcakes.
