Small Greens, Big Impact

Local organic microgreens bring a fresh, simple way to add vibrant flavor and nutrition to everyday meals. When you can find fresh microgreens near you, it becomes even easier to enjoy foods that feel both nourishing and full of life.

At Martindale’s Natural Market, we love sharing stories behind the food we carry. Some stories stand out not just for what is grown, but for the life behind it. This is one of those stories, and it begins with a remarkable grower.

Meet Kinga, founder of Vigor Greens. Her journey from Poland to Pennsylvania reflects resilience and a deep commitment to wellness—values that carry through in everything she grows.

What Makes These Local Organic Microgreens Different

Kinga grows her microgreens with a level of care that is hard to replicate at scale. These local organic microgreens are harvested, packaged, and delivered within hours. This short window helps preserve freshness in a way that larger distribution systems often cannot match.

She believes that once a plant is cut, its “life force” begins to fade over time. While minerals remain, she feels the plant’s vitality is strongest when it is freshly harvested and quickly enjoyed.

Because she operates on a small scale, she controls every step:

  • Humidity
  • Watering
  • Light exposure
  • Handling

Everything is done manually. Nothing is rushed. As she puts it, her heart goes into every tray she grows.

Her motto reflects that care:
Organic seeds. Organic soil. Water. And her heart.

What Are Microgreens?

Organic microgreens are young vegetable plants harvested at 7–14 days old. Though small—typically one to two inches tall—they are known for their bold flavor, delicate texture, and ability to add color and variety to everyday meals. Fresh microgreens near you offer a simple way to enhance foods you already enjoy.

Research from the University of Maryland College of Agriculture and Natural Resources, in collaboration with the USDA and published in the Journal of Agricultural and Food Chemistry, compared nutrient levels in microgreens to those of mature vegetables. According to the findings, certain microgreens contained nutrient concentrations 4 to 40 times higher than those of their mature counterparts.

Study Highlights:

  • Researchers evaluated 25 varieties of microgreens
  • Nutrients included vitamins C, E, and K, plus beta carotene
  • Many microgreens showed notable levels of antioxidants

These findings have helped bring microgreens into everyday kitchens. As a result, they offer a simple way to add freshness and variety to daily meals.

Understanding the research is helpful, but it becomes even more meaningful in everyday use. Different varieties each bring something unique to the table, both in flavor and in how they can complement your meals.

Small plants. Big potential

Here are a few popular varieties and what they’re often appreciated for:

  • Broccoli → Mild flavor and a versatile addition to many dishes
  • Pea → Fresh, slightly sweet taste with a tender texture
  • Radish → Bold, peppery flavor that adds a bit of bite
  • Buckwheat → Delicate texture with a mild, earthy taste

Each variety offers something a little different, making it easy to find one that fits your taste and your routine.

These small greens are simple to use, but there’s more to them than meets the eye. For our story, the real meaning behind these greens begins with Kinga—and the journey that shaped her.

From Poland to a New Beginning

Kinga grew up in Poland during the communist era, where educational paths were decided early. Students faced rigorous testing, and for many, the results shaped the direction of their lives. For boys who did not pass, it often meant being required to serve in the military.

As a young woman, she found herself drawn to two very different paths—medicine and computer science. In the end, she chose computer science, believing it would offer more flexibility for family life.

Still, her interest in health and wellness never faded. It remained a quiet but steady part of her life. Over time, her family came to rely on her for guidance, and she continued to read, learn, and stay connected to that passion—even as her career took her in another direction.

Starting Over in America

In 1988, Kinga and her husband moved to the United States after he accepted a position at Temple University. At the time, they had four children and just $30 to begin their new life. (Their family would later grow to five.)

When she arrived, she did not speak English. In those early days, a neighbor stopped by with pillows, dishes, and everyday essentials so her family could eat and sleep comfortably—a simple act of kindness she never forgot.

Over time, Kinga taught herself the language. The next step was searching the newspaper want ads for work. Eventually, that effort led to a role manually converting paper records into digital files—long before scanners were common.

It was a humble beginning, but it marked the start of something much bigger.

A Life of Reinvention

Kinga built a successful career in computer systems, working with teams across the globe. Over time, she became interested in how people communicate, lead, and work together.

To build on that, she trained through Georgetown University and became a certified coach. That experience helped her move into more people-focused work.

She later became a consultant and started her own coaching business, focusing on wellness, nutrition, and longevity. Her work evolved, but her curiosity never left. Even in the corporate world, her passion for health continued to grow.

From Wellness to Farming

Eventually, her family purchased a farm with a shared goal—to grow nutrient-dense food for their community.

In 2022, Kinga took a class on growing microgreens. From the very beginning, there was interest, and she began selling right away. Her 96-year-old aunt gave the business its name, and Vigor Greens was born—quickly becoming something meaningful, rooted in living food.

Pure Simplicity, Full Integrity

Kinga’s approach isn’t just about growing food—it’s about caring for people and the planet.

Her local organic microgreens are:

  • Certified organic
  • Grown in a controlled indoor environment
  • Packaged in plant-based, compostable materials

Her system is designed to minimize waste. Soil and plant remnants are composted or used to feed chickens, supporting a thoughtful, closed-loop approach.

More Than Food—A Community Mission

Kinga’s work goes beyond growing food. She creates space for connection, education, and wellness.

Her community offerings include:

  • Lunch & Learn sessions
  • Wellness workshops
  • Coding & growing programs for children
  • Yoga and hands-on classes at the farm

Her message is simple: small daily choices can shape long-term wellbeing.

Rooted in Community, Grown with Purpose

From starting over with $30 to building a business rooted in wellness, Kinga’s journey reflects resilience, heart, and purpose.

Her philosophy is simple: eat less and get more nutrition. For her, this means choosing nutrient-rich foods so the body gets what it needs without having to eat more.  It is a reminder that quality matters, and that small, intentional choices can make a meaningful difference over time.

At Martindale’s Natural Market, we are honored to connect our community with thoughtfully grown, locally sourced foods, including fresh microgreens near you that reflect care from seed to shelf.

From humble beginnings to a life rooted in purpose, Kinga’s story reminds us that what we choose each day matters. We’re honored to share her journey—and her work—with our community.
