6-7 cups mixed organic greens, washed and spun dry
2 cups mixture of strawberries and blueberries, washed and dried
1/2 cup pecans, lightly toasted
4 ounces goat cheese, crumbled
2 organic oranges, juiced and zested
1.5 – 2 tablespoons balsamic vinegar
1 tablespoon Dijon-style mustard
2 teaspoons honey
1 small clove garlic, peeled
1/2 teaspoon salt
3/4 teaspoon freshly ground black pepper
1/4 cup extra-virgin olive oil
Directions: Combine salad ingredients in a large bowl and toss gently. In a blender, combine all dressing ingredients except olive oil. Blend until smooth. With the blender running, add the olive oil in a slow, steady stream until well combined. Dress salad as desired. Serve immediately. Store unused dressing in an air-tight container in the refrigerator.
